Maryland Crab Cake Sandwiches

Ingredients

900g Maryland Jumbo Lump Crab meat
120ml mayonnaise
1 tbsp OLD BAY Seasoning
2.5 tsp Worcestershire Sauce
2.5 tsp Dijon mustard
3.75 tsp lemon juice
2 whole eggs
4 scallions, minced
6 drops Tabasco sauce
0.5 tsp sea salt, fine
450g crispy rice, fine ground
225g clarified butter

For the bread:
845g plus 2 tbsp bread flour
3.25 tbsp sugar
2 tsp salt
6 egg yolks
5.25 tbsp blended oil
0.5 tsp molasses
1.25 tbsp dry yeast
180ml plus 2 tbsp water (room temp)
Sesame seeds
Egg wash (1 egg beaten with 1 tbsp water)

For the garnish (optional):
Iceberg lettuce
Sliced tomato
OLD BAY Seasoning potato chips

Methods

Crab cakes: Mix mayonnaise, OLD BAY Seasoning, Worcestershire sauce, Dijon mustard, lemon juice, eggs, scallions, Tabasco sauce and salt in large bowl with wire whisk until well blended. Add crab meat, third at a time, stir gently with a spatula so crab meat is not broken up. Divide crab mixture into 12 crab cakes Coat both sides of each crab cake in ground cereal Heat half of the clarified butter in large skillet to medium heat (325F) Carefully place 6 of the crab cakes in butter with spatula. Do not crowd crab cakes; leave 1.5cm between them. Cook 2 minutes per side or until golden brown If necessary, keep crab cakes warm in low oven on wire rack set over baking sheet. Repeat with remaining clarified butter and crab cakes To serve, split buns and brush cut sides with melted butter. Toast in non-stick skillet or toaster oven. Serve crab cakes on buns with lettuce and tomato


Brioche buns: Mix water, sugar, yeast and molasses in medium bowl. Let stand in warm place 10 minutes. Mix oil and yolks in small bowl with wire whisk until smooth. Mix flour and salt in bowl of stand mixer fitted with dough hook. Add yeast mixture and yolk mixture; knead 10 minutes. Transfer dough to large greased bowl. Cover with plastic wrap. Let stand about 1 hour or until doubled in size. Shape into 12 balls, about 75g each. Place on parchment paper-lined baking sheet. Let stand about 1 hour or until doubled in size again Preheat oven to 350F. Brush tops of buns with egg wash. Sprinkle with sesame seeds. Bake 14 minutes, rotating baking sheet halfway through baking. Cool on wire rack Tip: Other great rolls to serve crab cakes on are Milk Bread Burger Buns, Kaiser Rolls or Potato Buns
