Garlic & Herb Marinated Chicken
10 chicken leg pieces
For the marinade:
2 lemons, zest and juice
120 ml olive oil
25 grams Schwartz Dijon Mustard
25 grams Schwartz Rosemary
30 grams Schwartz Garlic Granules
Schwartz Sea Salt to taste
Schwartz Black Peppercorns , freshly ground - To taste
Place the marinade ingredients in a bowl and mix together.
Score the chicken using a sharp knife, pour over the marinade, cover and refrigerate for 2 hours or overnight. Cook the chicken pieces in a hot oven (180C) for 25-30 minutes, turning occasionally and basting with any remaining marinade throughout cooking.
Try with cod fillets or pork fillets. Serve with potatoes or rice with a mixed green salad.
