Fig Banana Granola Bread

Ingredients


150g PaddyO's Fruit & Seeds Granola
180g flour
150g granulated sugar
6T butter, room temperature
2 eggs
2 bananas
3/4 tsp baking soda
3/4 tsp vanilla extract
3/4 tsp salt
4 figs, sliced thin

Methods


Preheat oven to 175C
In a large bowl, beat butter and sugar using an electric mixer until fluffy
Beat in eggs one at a time
In a small bowl, mash together bananas and baking soda. Add to sugar mixture
Combine flour and salt in a separate bowl. Add to batter
Stir in PaddyO's and vanilla extract until blended
Spoon batter into greased 9 x 13 bread pan
Top batter with fig slices
Bake in the oven for 1 hour or middle is no longer doughy (test with a toothpick)
Allow to cool on a wire rack
Slice + devour!
